River Road Park

Our new spring activity is visiting River Road Park. If Tuscaloosa has a redeeming quality, it is River Road Park. It is just as the name suggests: A park, on the river and by the road. It's so pretty with lots of cool bridges, rocks, nature, trees and of course, the river. We feel so relaxed when we go. So much so, that we have been 3 times in one week.









We even ate our lunch on the rocks.

Spring Break 2012!

Yeah. Spring Break as a "non-teacher adult" doesn't quite have the same feel as it used to. However, my teacher husband depresses me every year around these holidays when he is home and I am at work. So, I decided to take one glorious day off this year for "Family Day" during SB.

Brent, Baker and I headed to Birmingham to have lunch with some friends and then to the zoo! We had a lovely little day and taking off on a Wednesday is a great way to break up the week.

A Celebration

Saturday, we celebrated 80 years of life for my grandmother, Honey. She definitely lives her life abundantly. She has always been a strong, Christian example in our lives and has never been afraid to stand up for her beliefs. She is no "lay on the couch" type of person. She goes to the gym, paints, travels (overseas even), does Facebook and multiple other computer activities, and just moved into a brand new house that is beautiful! She is a great example of age being just a number.

She has never missed a birthday, recital, play, or any event in our life. She does everything with humor and a good attitude. We are all lucky to have her in our lives.

So, to celebrate, her 3 children put together a party by the river and it could not have been a better day. Everything was great, especially the weather. Some of the following party pictures are mine, but most are Claire's.

After the party we came home to rest for a little while. Then it was time to go back to the farm for more fun. It's not a Wright party unless there's a fire.

Healthy

Judging by my last two attempted Pinterest recipes, you would think I am on a health kick, but I am not. I have just been intrigued by two things lately that I want to try and they are both blog worthy.

First, I don't want to over sell this, but this Pinterest find is truly a gold mine to me. Its a Weight Watchers lemon cake recipe. I discovered my lemon obsession when I made some lemon cake balls last summer so this recipe called to me. It has 3 ingredients. Are your ready?


1 Box of lemon cake mix
20 oz. Diet 7-Up
1 tub of Cool Whip

That.is.it. Each serving is only 1.5 weight watcher points! If anything it was too easy not to try.

I made this last night and I was skeptical the whole time. I thought it was too much liquid, I thought it would never cook right. the batter was too thin, etc...However, once it has cooled it was amazing! AND LOW FAT/CAL!

Its so moist and tastes kind of buttery. Brent and I both went back for more. If you like lemon stuff, give it a try.

Second thing was a bit more of a stretch for me. Have you heard of the Green Monster Smoothies? They are supposedly super healthy. Enriched with tons of vitamins, fiber and protein. I was so intrigued by the fact that this smoothie has TONS of spinach, yet tastes like a milkshake. I had to try it for breakfast this morning.

They blog was right, it does not taste healthy at all. You CANNOT taste the spinach at all either. I won't go on and on about the smoothie as I did the cake, but it was still very good and very filling. Perfect if you don't eat enough greens (like me) in your daily life.



1 frozen banana (peel and cut before freezing)
1 Tablespoon peanut butter
1/2 cup Vanilla Chioban greek style yogurt
1 cup Vanilla Almond Breeze milk
4 cups Spinach

Blend all ingredients together in a blender until smooth.

Brent was totally grossed out by it this morning. I made him taste it. He did. He said it was "ok" but I think he just couldn't get passed all the spinach. I drank all of it so it was better than ok to me. It tasted like a peanut butter smoothie or milkshake. One thing I will do next time is make sure the spinach is blended well because I left too many bigger pieces which was hard to get passed I think.

I will definitely be making this again. People are calling it their "best kept diet secret".

350 Calories 10 g fiber 21 g protein.

The Mundane

We had a great weekend, although nothing outrageous or exciting happened. Sometimes mundane is good. So, a few things...

We got to visit with Nathan, Amy, Hayes, Watson, Shug and Daggy on Saturday afternoon. I didn't take my camera, but we had a fun little afternoon.

I bought a new clock at Hob Lob a few weeks ago and I love it. I'm trying to make all of my purchases in 2012 either used, refurbished, consigned or with a coupon. I've had great luck so far. This clock was 50% off so it totally counts.



The bathtub line-up. Once each toy is placed strategically on the sides, I give the toy a personality (unless they already have one. for ex: Buzz Lightyear always says "To Infinity and Beyond") and then the toy jumps into the tub. This happens nightly.

Something to note from the weekend that was not mundane, but incredibly funny. Bake got a very late start to his nap on Sunday and apparently he was delirious. So, he started to spout off all the information he had in his head..at random. We watched/listened through the monitor for an hour. It was Sunday entertainment at its finest. Some things overheard from the bed were:

"I need your help Mommy, I need your help" (as one leg hung over the bed) this was said at least 25 times
"Save me Buzz Lightyear, save me!"
*singing in a soprano voice* "I'm a COOOWWWW, MOOOOOOO. I"m a COOOOWW, Moooo"
"Licorice, get down *CLAP* (Lic was not in his room)
"I'll be right back. OK! I'll be right back. OK!"
*walking tiger across the bed* "Walk, walk, walk walk"

We have never had trouble with afternoon naps so this was just so random and it literally lasted for an hour until he finally fell asleep. One statement more bizarre than the next.
This is my favorite age for sure.
Therefore, as God's chosen people, holy and dearly loved, clothe yourselves with compassion, kindness, humility, gentleness and patience. Bear with each other and forgive whatever grievances you may have against one another. Forgive as the Lord forgave you.
